Energy Bites

1 cup rolled oats
1/2 cup natural almond butter
1/4 cup ground walnuts
1/4 cup honey or maple syrup
1/4 cup apple sauce
1 tbs. chia seeds
2 tbs. flax seed meal
3 tbs. mini chocolate chips
Pinch of salt
1/4 tsp. ground cinnamon
Other optional additions: raisins, nuts, dried fruits, quinoa

 

Lunch

Vegetable Frittata

A Croissant {because we all need to indulge every once in a while} with a vegetable frittata consisting of eggs, zucchini, mushrooms, kale + onions.

Mixed organic greens with carrots, quinoa and red onions

 

Dinner

Healthy Chicken Cutlets

Organic chicken cutlets dipped in egg and my “better than breadcrumbs” recipe:
Ground walnut
Ground cashews
Quinoa
Sesame seeds
Turmeric powder
Himalayan sea salt

Vary the amounts as desired.
Bake for 30 minutes on 300F.

Lady Bug Tomatoes

Hummus spread on crackers {as “glue”}

Kale as a bed for the “lady bugs”
Cherry tomatoes, quartered.
Large pitted ripe olives, chopped.
